He discusses the differences between the Palliser Sauvignon Blanc and other New Zealand Sauvignon Blancs, as well as the 2008 vintage and aging Sauvignon Blanc.

    Interesting that there was a focus on wine being tasted in the air, I wonder if the tasting conditions (pressure, humidity) affect perception in those wines, I understand that there can be suppression of fruit and sweet oak character and I wonder if the wines are tailored to accommodate this?

    I highly recommend there Pinot Gris and Pencarrow wines. If available in HK give them a try.
