Debra meets the charming Isabella Bisol of Ruggeri, regarded by many as Italy’s finest Prosecco producer. They discuss the pressure and atmosphere of Prosecco and whether it is uniform or varies across producers, as well as some of the standard sparkling wine pressure regulations. They discuss the bottling of Prosecco, and whether they bottle or order, or once a year, along with how long the fermentation process is. Finally, they discuss the different grape varieties used in Ruggeri’s various Proseccos, including an ancient and autochthonous red grape variety.
